Oven Broasted Carp

On this Thanksgiving, I'd like to share one of my family's seasonal favorite recipes: Oven Broasted Carp. 

Ingredient List:
  • 1 freshly caught carp
  • Juice of one lemon
  • 1 lemon, thinly sliced with rind on
  • 4 T minced, fresh flat-leaf parsley
  • 3 garlic cloves, minced
  • 1 hickory plank
  • Vegetable oil or spray
  • Salt and pepper
Follow these simple directions:
  1. Scale carp using de-scaler or spoon.
  2. Remove carp's head and entrails.
  3. Thoroughly wash carcass inside and out.
  4. Place carp on lightly oiled hickory plank.
  5. Squeeze juice of lemon liberally on carp.
  6. Sprinkle minced garlic over carp.
  7. Cover carp with thin lemon slices.
  8. Spread 4T of minced flat-leaf parsley over carp.
  9. Salt and pepper to taste.
  10. Cover carp and board with aluminum foil.
  11. Heat oven to 450 degrees.
  12. Place carp in oven and bake for 6 hours.
  13. Carefully remove carp from oven.
  14. Discard foil and carp.
  15. Eat hickory board.
